Transform overlooked ingredients and leftovers into delicious, sustainable meals, proving that great flavors can have a second act.

Vegetable Scrap Broth:

  • Ingredients: Vegetable scraps (onion skins, carrot peels, celery leaves, etc.), water, salt, pepper, herbs (like thyme or bay leaves).
  • Instructions: Collect vegetable scraps in a freezer bag. When you have enough, place them in a large pot, cover with water, add salt, pepper, and herbs. Bring to a boil, then simmer for 1-2 hours. Strain and use the broth for soups or stews.

Crispy Potato Skin Chips:

  • Ingredients: Potato skins, olive oil, salt, pepper, your choice of seasonings (like paprika or garlic powder).
  • Instructions: Preheat the oven to 400°F (200°C). Toss potato skins with a bit of olive oil, salt, pepper, and your chosen seasonings. Spread on a baking sheet and bake until crisp, about 15-20 minutes.

Herb Stem Pesto:

  • Ingredients: Herb stems (basil, parsley, cilantro), garlic, nuts (pine nuts, walnuts, or almonds), Parmesan cheese, olive oil, lemon juice, salt, pepper.
  • Instructions: In a food processor, combine herb stems, garlic, nuts, and Parmesan cheese. Process while slowly adding olive oil until you reach your desired consistency. Season with lemon juice, salt, and pepper.

Bread End Croutons:

  • Ingredients: Ends of a loaf of bread, olive oil, garlic powder, dried herbs (like oregano or thyme), salt, pepper.
  • Instructions: Preheat the oven to 375°F (190°C). Cut bread ends into cubes. Toss with olive oil, garlic powder, dried herbs, salt, and pepper. Spread on a baking sheet and bake until golden and crispy, about 10-15 minutes. Great for salads or soups.

Carrot Top Pesto:

  • Ingredients: Carrot tops (from 1 bunch of carrots), 1 garlic clove, ¼ cup nuts (like pine nuts, walnuts), ⅓ cup grated Parmesan cheese, ⅓ cup olive oil, lemon juice, salt.
  • Instructions: Rinse and dry carrot tops. Blend with garlic, nuts, and Parmesan in a food processor. Gradually add olive oil until smooth. Season with lemon juice and salt. Use as a pasta sauce or a sandwich spread.
